Soups On...

The husband and I had this for the first time today. It cooks up quickly. It's nice and thick and very tasty. It's a recipe worth sharing. Enjoy!

Baked Potato Soup:

1/4 c. butter
1/4 c. chopped onion
1/4 c. flour
14 oz. can chicken broth
1 can evaporated milk
2 large "Baked" potatoes
Salt and pepper to taste

Optional toppings: Bacon bits, Grated cheese, green onion, sour cream
Makes 4 servings

Melt butter in medium sauce pan over medium heat. Add onion and saute until tender. Stir in flour and then add chicken broth and milk. Scoop pulp from one potato and mash, add to soup. Stir occasionaly. Bring to boil. Remove peel from last potato and cut into cubes add to soup. Scoop into bowl and top with choice of optional toppings.
